Now gnocchi can go light on carbs, but all-in on yums. So, how did we do it? We experimented, we ate, we improved, then we ate some more. We replaced much of the potatoes, cheese and eggs in traditional gnocchi with cauliflower, brown rice and cassava flour. It looks like gnocchi, tastes like gnocchi, but has only 42 grams of carbs. Plus it’s gluten-free so everyone can have a seat at the table.
